In an attempt to bring failure back to success after an unsatisfactory baking session two days ago, I decided to come back in full swing with a vengeance this time with a batch of vanilla muffins.
The recipe? plain vanilla muffins, with my own slight modifications of course!





Ingredients
1 1/2 cups of All Purpose Flour
1 tsp Baking Powder
1/2 tsp Baking Soda (my own addition)
1/2 tsp Salt
8 tbs Butter
1 cup Sugar
3 Eggs
1 1/2 tsp Vanilla Essence (I used 1 1/2 tablespoon instead to really bring out the flavour)
3/4 cup Milk
*Pre-heat the oven to 180 degrees celcius
In a large bowl, cream the butter with sugar, then add in the eggs one by one followed by vanilla essence
Sift the powders together. To the creamed butter, sugar, eggs and essence – add in the sifted powders and fold gently, followed by milk. Do it step by step until all the flour and milk is added.
Put into muffin trays and bake for 20 minutes! Once it’s nicely done, extract some creative juices and let the decorations take place. I did three different types of decorations. One was a light dusting with icing sugar and coco powder. The other was choc olate chips and icing sugar dusting while the last one was brushed with a thin layer of icing sugar cream and some colourful sprinkles.
Makes 18!
